I had a craving for pineapple upside down cake. However, I am the only person in the house that likes it. So, I decided to bake it in some mason jars and see if I’d have any takers. Yay! Three out of four liked it! Here is the super easy recipe.
One box Duncan Hines Pineapple Supreme cake mix
One 15 oz. can Dole pineapple chunks (drained, reserve juice)
6 Tablespoons melted butter
1 Cup brown sugar
Melt butter and distribute evenly into 6 mason jars. Sprinkle brown sugar over top of melted butter. Evenly distribute pineapple chunks into jars. Prepare cake mix as directed on box, but substitute reserved pineapple juice for water in cake mix directions.
Evenly distribute prepared cake mix into jars. Sprinkle 2 tblsp. additional brown sugar on top of each jar of cake mix. Bake at 350 for approx. 20 min or until tops are golden brown.
