Happy weekend! I made these muffins last weekend and had to share! They are super moist and delicious. Especially, when served warm with a little pat of butter! Try serving some up this holiday weekend for breakfast! Enjoy the long weekend friends.
Make sure you fill up those muffin liners! I use an ice cream scoop!

Strawberry Cornmeal Muffins
These fruity, not-too-sweet muffins are moist and delicious!
1 cup flour 2 cups chopped fresh strawberries
3/4 cup cornmeal 1 – 8 oz. container strawberry or vanilla Greek yogurt
2 1/2 tsp. baking powder 1/4 cup butter melted
1/4 tsp. salt 1 egg lightly beaten
Preheat oven to 350. Lightly grease or line muffin tin.
In a large blow, sift together all dry ingredients.
Wish yogurt, butter and egg together. Stir yogurt mixture into the flour mixture, just to moisten. Fold in strawberries. Spoon batter into prepared muffin tins.
Bake in preheated oven for 25 minutes or until a tooth pick inserted in the center of a muffin comes out clean.
Makes 1 dozen big muffins.
